We finally made homemade flour tortillas according to the recipe that's in the curriculum we're using right now. Delicious. I need to go to the grocery and we were completely out of chicken and hamburger meat, so we made bean tostadas with them and they were so good; a much better flavor than the ones you buy at the store. We may actually make a habit of making them ourselves. At one point, I did get to say to my youngest son "Finish eating your schoolwork." so we could go onto the next subject.

Here it is:
2 cups flour
1 t. salt
1 Cup lukewarm water
1/4 cup shortening
Combine flour and salf in a mixing bowl. Cut in shortening with 2 knives. Gradually add water. Toss with a fork to make a stiff dough. Knead until smooth. Grease surface of dough, cover tightly and refrigerate for 4-24 hours. Let dough return to room temperature before rolling out. Divide dough into 8 balls, roll as thin as possible. Drop onto very hot ungreased griddle. Cook until freckled on 1 side, then flip, etc.
We, of course, took shortcuts and didn't refridgerate it! Then we topped each one with refried beans (cooked with taco seasoning), lettuce, cheese, tomato and sour cream and they were really good.
Oh this sounds so yummy and simple! My kind of recipes. :)
